This is great for a quick breakfast on those hot summers mornings.
My kids also love it so it’s a winner!
Serves 1 smoothie or 2 ice lollies
l 75g frozen berries
l 60ml cream
l 60ml coconut cream
l 60ml cold water
l 2 tsp coconut oil, melted
l Mint leaves, to serve
Put the frozen berries, cream, coconut cream, water and coconut oil in a blender and blitz until smooth. Pour into a glass and serve garnished with a sprig of mint.
You can also make these into healthy popsicles for the kids (or yourself) by pouring the smoothie into ice-cream/popsicles moulds.
So simple yet so YUMMY!
