Who needs Mac ‘n Cheese when this healthy version is even more tasty!
l Butter, for greasing
l 1 large cauliflower, cut into small florets
l 1 tsp salt
l 250ml cream
l 60ml cream cheese, cut into pieces
l 1 tsp Dijon mustard
l 180g grated cheddar cheese (120g in recipe, 60g as topping bake)
l Pinch of garlic powder salt and pepper
Preheat oven to 180c, fan 160c, gas 4, and grease a 20cm square ovenproof dish with butter and set aside. Cook the cauliflower in boiling water for 5 minutes. Drain well and pat between paper towels to dry, then transfer to the baking dish. Bring the cream to a simmer in a small saucepan. Add cream cheese and mustard and whisk until smooth. Stir in 120g of the grated cheese and allow to melt. Season with salt, pepper and garlic. Pour the cheese sauce over the cauliflower, top with the remaining grated cheese and bake for 15 minutes, until browned and bubbling.
