Cauliflower cheese bake (healthy Mac ‘n Cheese)

Ingredients

  • Butter, for greasing -
  • Cauliflower, cut into small florets - 1 large
  • Salt - 1 tsp
  • Cream - 250ml
  • Cream cheese, cut into pieces - 60ml
  • Dijon mustard - 1 tsp
  • Grated cheddar cheese (120g in recipe, 60g as topping bake) - 180g
  • Pinch of garlic powder salt and pepper -

Method

  • Preheat oven to 180c, fan 160c, gas 4, and grease a 20cm square ovenproof dish with butter and set aside.
  • Cook the cauliflower in boiling water for 5 minutes.
  • Drain well and pat between paper towels to dry, then transfer to the baking dish.
  • Bring the cream to a simmer in a small saucepan.
  • Add cream cheese and mustard and whisk until smooth.
  • Stir in 120g of the grated cheese and allow to melt. Season with salt, pepper and garlic.
  • Pour the cheese sauce over the cauliflower, top with the remaining grated cheese and bake for 15 minutes, until browned and bubbling.
