Egg and Bacon Muffins

Ingredients

  • Fresh cream - 1/4 cut
  • Large eggs - 12
  • Rashers of bacon or more if desired - 12
  • Salt - 1 teaspoon
  • Ground pepper - 1 teaspoon

Method

  1.  Preheat oven to 180* C
  2. Grease a muffin tin well
  3.  Mix eggs and cream and salt and pepper
  4. Place bacon around inside of each muffin cup
  5.  Pour egg mixture over bacon until each cut filled almost to top
  6. Bake for +_ 20 minutes or until eggs are a golden brown color
  7.  Remove from oven and let cool for 3 minutes before taking out carefully with a spoon
  8. Can be served with cheese, olives, fresh green. sausage, pesto, etc, etc
