Green Smoothie by Emily Maguire

Ingredients

  • Spinach - 2 large handfuls
  • Large avocado - ¼
  • Stems of broccoli (optional) - 4
  • Kale - 1 handful
  • Melon - 1 slice
  • Walnuts - 50g
  • Coconut milk - 100mls
  • Full fat greek yoghurt - 2tbsp
  • Hazelnut butter (can substitute for a nut butter of your choice) - 2tsp
  • Unsweetened almond milk - 100mls
  • Water (this is optional depending on how thick you would like it) - 50mls
  • hey protein (again optional) - ½ scoop

Method

  1. Place all of the vegetables and walnuts into a blender and blitz
  2. Next add in the coconut milk, yoghurt and nut butter and blitz again
  3. Pour in the almond milk and whey protein and blitz
  4. If the mixture is still a little thick, add in the 50mls of water
  5. Pour into a glass or take in a flask with you for on the go
  6. For added crunch you can garnish the top with a few walnuts
