Vegetable Fries

I’ve just returned from the most amazing road trip across California with my family. As we were travelling in the car most of the time and driving for long periods of time I didn’t have the opportunity to cook for my family. We relied on restaurants and supermarkets such as Wholefoods.

My kids got into the habit of ordering burgers and fries but tried to adapt it to be a ‘healthier’ version of the original by asking for their burgers to be lettuce wrapped and a side order of broccoli or sweet potato fries. I would have the sweet potato fries as an occasional ‘treat’ but stuck mostly to salad or extra veg.

Now that we are home they are asking for sweet potato fries and it’s super easy. It can also be substituted with other veggies such as courgettes, carrots and even green beans.

Here’s my super simple version for vegetable fries:

Preheat oven to 180*C

Cut your choice of veg into matchsticks.

In a large bowl toss the veggies with just enough coconut oil, butter or ghee to coat.

Sprinkle with paprika or other herbs and spices.

Spread veggies in single layer on prepared baking sheet, being sure not to overcrowd.

Bake until veggies are tender and golden brown, turning occasionally, about 20 minutes.

Serve with homemade mayo or homemade tomato ketchup.

I use this as an side dish to protein such as roast chicken, grilled fish or steak.
